Ingredients:
1 cup suji (semolina)
¾ cup sugar (adjust to taste)
2 cups water (or milk for a richer taste)
½ cup ghee (clarified butter)
¼ teaspoon cardamom powder
8-10 cashews
8-10 almonds (sliced)
8-10 raisins
A pinch of saffron (optional)
Instructions:
Step 1: Roast the Suji
1. Heat ½ cup ghee in a pan on low-medium heat.
2. Add cashews, almonds, and raisins. Fry until golden brown. Remove and keep aside.
3. Add 1 cup suji and roast it in the same ghee, stirring continuously, until it turns light golden and releases a nutty aroma. (Tip: Keep stirring to avoid burning.)
Step 2: Prepare the Sugar Syrup
4. In another pot, heat 2 cups of water (or milk).
5. Add ¾ cup sugar and stir until fully dissolved.
6. Add cardamom powder and saffron (if using).
Step 3: Combine & Cook
7. Slowly pour the hot sugar syrup into the roasted suji, stirring continuously to avoid lumps.
8. Cook until the mixture thickens and the ghee starts separating from the sides.
9. Add the fried nuts and raisins, mix well.
